BBQ Chicken Meatballs

These meatballs are actually inspired by the gluten-free BBQ Chicken Pizza at California Pizza Kitchen, which was always one of my favorite all-time pizzas. Take the toppings of that pizza – chicken, cilantro, red onion, and BBQ sauce – and combine them into meatballs! These would be great grilled, but I don’t have a grill, so I use the stove top. You can also place them on a baking sheet (lined with parchment or foil for easy cleanup) and bake them for about 15-20 minutes at 350F. Top with some extra BBQ sauce for serving!

Instructions
  1. Combine the chicken, barbecue sauce, cilantro, and red onion and form into 1-inch balls.
  2. Heat the cooking fat in a skillet over medium heat and saute the meatballs until cooked through, about 10-15 minutes, stirring occasionally.

      You’ll have to make your own using the recipe linked to or any other AIP BBQ sauce recipe (there are several floating around out there).

      Marcia, did you use ground chicken breast (white meat) or thigh (dark meat)? I’m undecided on which to try and want to make these this weekend!

    Hi there…being strict AIP myself…what do you eat these with? I’m finding the only side I’m eating pretty much is sweet potato…other than veggies that is. Could use some other ideas.

    The sauce on these was terrific. The meatballs were very good with one tweak, I cooked the first batch and they REALLY needed seasoning with sea salt.

    So, my advice is to add 1 tsp to 1-1/4 tsp of sea salt to the chicken mixture of cilantro, onion and sauce and mix well. Really good, we enjoyed them.

    For those of us who don’t understand the obsessive use of cilantro bcuz it tastes awful (its scientifically proven to effect lots of people) is there an alternative flavor additive like fresh parsley? The recipe is good other than that.
