Cabbage and Avocado Salad with Blood Orange Vinaigrette

This is one of my favorite chopped salad recipes, as it makes a lot and keeps well in the fridge (sans avocado). Feel free to substitute a regular orange if your market does not have a blood orange.

Cabbage and Avocado Salad with Blood Orange Vinaigrette

Serves: 6
Ingredients
  • 1 head savoy cabbage, shredded
  • 1 small red onion, thinly sliced
  • 3 carrots, grated
  • 1 handful parsley, chopped
  • 2 blood oranges, juiced
  • 4 tablespoons olive oil
  • 2 teaspoons coconut vinegar
  • 3 teaspoons salt
  • 1 or 2 avocados, cubed
Instructions
  1. Combine cabbage, onion, carrots, and most of the parsley.
  2. Combine the juice from the oranges, olive oil, coconut vinegar, and salt in a small bowl.
  3. Toss the dressing with the cabbage mixture, adding avocado and parsley on the top.

    I’ve noticed already that a few of your recipes feature cruciferous vegetables (those that fall in the family with broccoli, cauliflower, cabbage, kale, collards/greens, Brussels sprouts, etc). Since I read somewhere that you are a thyroid sufferer, I was a bit surprised to see them on here. I know they’re super good for you, unless you have an underactive thyroid, but I can’t find anyone who can tell me with any credibility or authority how much or how often it’s OK for hypothyroid people to eat them. Do you know? Many thanks!

    I know this is a blood orange vinaigrette, but is there another dressing you can recommend? I can’t have citrus except for lemons & limes. Thank you!

      Do you have my ebook or print book? There is an apple cider vinaigrette as well as a raspberry vinaigrette that would work well for this salad. Hope it helps!

    Newbie cook here! Should I toss the dressing with the cabbage and then keep it in the fridge, or store the dressing separate? Thank you!

      If you can keep it separate that would be best, but cabbage is pretty sturdy so it should keep for a day dressed. Hope it helps!
