  1. Heat the coconut oil in a large skillet over medium-high heat. Stir-fry the garlic and ginger for 1 minute.
  2. Add the chicken and stir-fry 5 minutes.
  3. Add the remaining ingredients except basil and simmer, stirring frequently, until the chicken is cooked through, about 10 minutes.
  4. Stir in the basil and serve.
