AIP Strawberry Cheesecake

- In a blender or food processor, combine crust ingredients and blend until most of the dates are small. Should resemble crushed graham crackers.
- Spread the mixture evenly into the bottom of a lined cupcake tin. Pressing the mixture down with your fingers to create a smooth surface. Set aside.
- In a large bowl, combine hot water and 2 scoops beef gelatin. Whisk until smooth.
- Add the remaining filling ingredients and whisk until smooth.
- Pour mixture evenly into each cupcake tin and chill in the fridge for an hour or until solid.
- In a medium-sized sauce pot on medium low, combine strawberries and maple syrup. Reduced for about 15 minutes, stirring occasionally.
- Add gelatin and stir with a whisk until there are no more chunks.
- After the mixture has thickened, remove from heat and allow cool before topping cheesecakes.
