Place shrimp, garlic and sea salt in a bowl to toss, marinate 30 minutes and set aside. I like to do this first so that shrimp are evenly coated in the spices. Note: shrimp may also be marinated overnight.
Make your guac: In a medium bowl, mash together avocado, lime juice and salt to desired consistency. Mix in onion and cilantro.
Cook the shrimp: Heat olive oil in a pan over medium high heat. Add marinated shrimp to pan and cook for 1 to 2 minutes per side until just opaque and cooked through.
Assemble: Place guacamole in a dish of your choice, top with garlic shrimp and Enjoy!
