Garlic Shrimp Guacamole

Serves: 4-5 servings
  • 2 large avocados
  • ½ - 1 teaspoon sea salt, depending on preference
  • Juice of ¼ lime
  • Cilantro, chopped
  • Red onion, chopped

  • 1 lb shrimp
  • 3 cloves garlic, crushed
  • 1 teaspoon sea salt
  • Olive oil for sautéeing
  1. Place shrimp, garlic and sea salt in a bowl to toss, marinate 30 minutes and set aside. I like to do this first so that shrimp are evenly coated in the spices. Note: shrimp may also be marinated overnight.
  2. Make your guac: In a medium bowl, mash together avocado, lime juice and salt to desired consistency. Mix in onion and cilantro.
  3. Cook the shrimp: Heat olive oil in a pan over medium high heat. Add marinated shrimp to pan and cook for 1 to 2 minutes per side until just opaque and cooked through.
  4. Assemble: Place guacamole in a dish of your choice, top with garlic shrimp and Enjoy!
