  1. Add olive oil to skillet over medium high heat.
  2. Next add the onion and cook until translucent. Next add the sweet potato and cook for another 3 minutes.
  3. Then add the ground meat and sprinkle the taco seasonings and salt over the meat. Cook about 10 minutes or until the ground meat is no longer pink and the potato is cooked through and golden on the outside.
  4. Once finished cooking, serve with your favorite toppings.
I have three options for salsa: Mango Papaya, Strawberry and Apple.
You can either make your own tortillas or use Siete tortillas. Just make sure you read the ingredients and get the AIP-friendly ones.
