Cut apples into ½ - 1 inch cubes, ensuring that all are about equal size.
Place apples in a skillet and add the water. Cover the pan and cook over medium heat for approximately 5 minutes, stirring occasionally until the apples become slightly soft and water mostly absorbed.
Now add your coconut oil to the skillet. Stir the apples and oil together. Cook for 5 minutes, stirring occasionally, until the apples become soft. Cover if need be to help with this process.
Next, add maple syrup, cinnamon, salt and vanilla. Stir until well-combined.
Cook for 5 minutes, stirring occasionally, until the apples reach desired softness.
Remove from heat, serve and enjoy!
