Vegetable Scramble

Serves: 2-3
- 2 tbsp coconut oil
- 3 cups butternut squash, diced
- 3 cups red cabbage, chopped
- ½ cup green onions, chopped
- 1 tsp sea salt or more to taste
- On medium heat, melt coconut oil in a large skillet or frying pan.
- Add butternut squash, red cabbage, and salt. Cover and simmer for 15 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Right before serving, garnish with green onions.
