One of the things my husband and I love most about living near Austin is all the wonderful gluten-free Thai food we can find locally. We’ve got haunts for cheap Thai food, fancy Thai food, not-too-spicy Thai food, and everything in between. Thai Iced Tea is our favorite beverage. Thai basil is our favorite herb. Thai omelets are our favorite breakfast. Tom Kha Gai is our favorite soup. These facts tell me two things: 1) My husband and I are culinary soulmates and 2) We definitely need to go to Thailand someday.

But, you know, there’s that little thing called the autoimmune protocol. Finding gluten-free Thai food might be easy, but grain-free, legume-free, nightshade-free, egg-free, seed-free, and nut-free Thai food? Erm. That sounds hard. Which is why I decided to usher in the new year by developing some ultra-tasty homemade AIP-friendly Thai-inspired dishes to keep us on track and maybe even save us some green in 2017.

The result? This Thai Basil Chicken will blow your mind. Not only is it super easy to make, it is so gooooooood! Serve with some cauliflower rice and a Thai drinking vinegar for a truly Thai-tastic AIP meal.

Ingredients
Instructions
  1. Heat the coconut oil in a large skillet over medium-high heat. Stir-fry the garlic and ginger for 1 minute.
  2. Add the chicken and stir-fry 5 minutes.
  3. Add the remaining ingredients except basil and simmer, stirring frequently, until the chicken is cooked through, about 10 minutes.
  4. Stir in the basil and serve.

    Can I substitute regular basil (Italian basil) as that is all I see offered, even at my local Whole Foods?

    Hello! I’m excited to try this but am wondering if I can substitute anything for the apple cider vinegar? I’m sensitive/intolerant to yeast, so don’t believe I can have ACV, but it’s in so many of the AIP recipes.

    I have seen coconut aminos in several recipes. I have liquid aminos in my fridge. Are these not allowed on AIP?

      Hi Christina, it depends on the brand, but most aminos are made from wheat/soy and are not included on the elimination diet. Coconut is an AIP-friendly alternative. Hope it helps!

      Hi Sarah! You can try using a different solid cooking fat like coconut oil, duck fat, or tallow.

    Hi! This is so delicious! I love having it over cauliflower rice and sometimes adding some broccoli or other veggies with it! I also needed this fast with minimal work so I stir-fried the garlic and ginger and then added all the ingredients to the Instant pot! Amazing! Thank you for the recipe!
