This is a very simple and fast recipe for ginger and green onion sausage patties I created years ago and still make several times a month. I loved pork stir-fries with lots of soy sauce pre-AIP, but after going through the elimination and reintroduction process, I realized that soy did not love me back. However, when I broke it down, the amazing ginger and green onion were still full of the intense flavor I craved . . . that’s how these sausages were born. I like to make a big batch and freeze with parchment paper, then it’s the quickest protein boost to my breakfast ever!
This recipe is designed to be compliant with Core AIP and suitable for the Elimination Phase of the Autoimmune Protocol. - 1 lb ground pork
- ½ cup sliced green onion
- 1 tablespoon ground ginger
- 1 teaspoon sea salt
- Cooking fat of choice
- In a large bowl, mix all ingredients by hand.
- Form 4 large patties or 6 medium patties.
- Fry in a dry skillet over medium heat.
- Cook 5-7 minutes per side, until cooked through.
