This is a very simple and fast recipe for blueberry pork patties I created years ago and thought it was high time to bring it here to the blog. The stand-out flavor combination of thyme and blueberry is delicious. I never combined fruit and meat before adopting AIP, but now I do it all the time and the flavors always pleasantly surprise me. Whether you make these patties for breakfast or (like me) as part of a quick lunch, I’m sure you’ll love how easy, yet mouthwatering good they are. Enjoy!
This recipe is compliant with Core AIP, the original version of the Autoimmune Protocol used in published studies. It is suitable for the Elimination Phase, when potential trigger foods are temporarily removed while nutrient-dense foods are emphasized. - 1 pound ground pork
- ½ cup fresh blueberries, washed and sliced in half
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
