Blueberry pork patties with thyme

This is a very simple and fast recipe for blueberry pork patties I created years ago and thought it was high time to bring it here to the blog. The stand-out flavor combination of thyme and blueberry is delicious. I never combined fruit and meat before adopting AIP, but now I do it all the time and the flavors always pleasantly surprise me. Whether you make these patties for breakfast or (like me) as part of a quick lunch, I’m sure you’ll love how easy, yet mouthwatering good they are. Enjoy!

Thyme Blueberry Pork Patties

Serves: 4-6
Ingredients
  • 1 pound ground pork
  • ½ cup fresh blueberries, washed and sliced in half
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
Instructions
  1. In a large bowl, mix all ingredients by hand.
  2. Form 4 large patties or 6 medium patties.
  3. Fry in a dry skillet over medium heat.
  4. Cook 5-7 minutes per side, until cooked through.
